This Cauliflower Salad recipe is bursting with tons of greek flavors and lots of fresh veggies. An easy make ahead recipe perfect for cookouts or potlucks. Low Carb, Gluten Free, Vegan option.

A cauliflower salad that's so easy to prepare with lots of veggies, salty olives and the best vinaigrette ever!
This greek cauliflower salad recipe is perfect as a side dish or great for a quick healthy lunch.
Especially since you can easily make this ahead and the flavors improve over several hours time.
And if you love pizza like we do, you'll want to try this cauliflower pizza crust! It's also low carb, gluten free and delicious topped with all your favorite toppings.
Ingredients for greek salad dressing

- Apple cider vinegar- could substitute with red wine vinegar.
- Olive oil- I recommend organic extra virgin olive oil.
- Garlic- finely mince the garlic.
- Seasonings- dried oregano and basil.
- Dijon mustard- could swap out with a spicy mustard.
- Lemon juice- this needs to be freshly squeezed lemon juice for the best flavor.

Salad ingredient notes
- Cauliflower florets- you want to lightly blanch/cook the florets and then drain and rinse in cold water before adding to the salad.
- English cucumber- I recommend removing the seeds from the cucumber. This keeps the salad from having extra moisture.
- Red onion- don't swap this for another onion as it won't yield the same results.
- Grape tomatoes- can substitute with cherry tomatoes.
- Kalamata olives- can substitute with black olives.
- Feta cheese- for the vegan option you can just leave it out or use a dairy free vegan feta cheese. I love this brand of dairy free feta cheese.
How to make it
- Start out by whisking together all the ingredients for the greek salad dressing.
- Next add all the chopped ingredients to a large mixing bowl.
- Pour dressing over salad and combine. Add optional feta cheese.
Storage notes
This can be stored covered in an airtight container in the fridge for 3-4 days.
I find it's best after several hours or the next day.
What to serve with it
It's great served alone or topped on a bed of salad greens.
Or as a side that goes with most meals.
You could also mix in chickpeas for added protein and serve it with some crusty garlic bread.

Greek Cauliflower Salad Recipe
Greek Cauliflower Salad is a light tasty dinner packed with cauliflower, black olives, red onion, cucumber and a Greek style salad dressing.

Ingredients
- 1 medium head of caulilflower
- 1 medium sized English cucumber
- Β½ pint grape tomatoes
- 10 black olives pitted
- ΒΌ large red onion diced
- 4 ounces crumbled feta cheese
Dressing:
- Β½ cup olive oil
- Β½ cup apple cider vinegar
- 1 lemon juiced
- 2 tbsp. Dijon mustard
- Β½ tsp. dried oregano
- Β½ tsp. dried basil
- 3 cloves garlic finely chopped
- salt & pepper to taste
Instructions
Start by making salad dressing.
In small mixing bowl combine olive oil, apple cider vinegar, dijon mustard, oregano, basil, garlic, salt & pepper and whisk together well. Set aside.
Meanwhile bring large pot of lightly salted water to a boil.
Break the cauliflower into small bite sized florets and when water comes to boil carefully add cauliflower.
Cook about 7 minutes. Drain and rinse with cold water to stop cooking.
Place drained cauliflower in large salad bowl
Add chopped cucumber, black olives, grape tomatoes, red onion, feta cheese, prepared salad dressing and mix well.
Cover and store in fridge for up to five days.

Had to try your recipe as you instructed. Your recipe looks great but is not. Your dressing is way too much and the ratio should be 3:1 oil to vinegar. The recipe was drowning in dressing. Too much lemon. Why do you need to cook the cauliflower so much. 7 minutes is over kill unless you don't really like cauliflower. Raw would be fine or blanch for 1-2 minutes.

Thanks for the feedback Corinne and if you prefer the cauliflower raw then that's definitely an option, along with using less dressing on the salad. This recipe is very versatile and can be easily tweaked to your personal preferences.

Easy and delicious. Served with chicken schawarma and yellow rice. There is a lot of dressing since the cauliflower doesn't absorb it. Going to make a little pasta and mix it with the left over salad for lunch. Loved that I could sub what I had and was delicious. Loved this technique of cooking the cauliflower. It was done perfectly

OMG I love this! I love a Greek salad and all the flavors but sometimes I get tired of all the lettuce. I have even tried it with potatoes too but never with cauliflower. I am in awe of the idea and love that it is low carb and all the added veggie benefits!!

Why is it that super charming, small restaurants seem to go under??? There was a place I looooved back in Orlando that closed it's doors.
